Eagle Cawffee sets sights on opening a coffee shop on Fry Street and a matcha bar off the Square

“Once we posted our announcement that a real brick-and-mortar Eagle Cawffee was coming, just hearing the support from everybody who visits us every single day made it so worth it,” Flores said.

They also plan to open a matcha bar called Malibu Matcha at 216 W. Mulberry St., where they'll share the space with art gallery and designer toy store Velcrokid.

“We're leaning towards a more elevated matcha experience than what we already offer,” Flores said.

The couple met while attending UNT and opened the Eagle Cawffee cart about two years ago. In that time, their business has grown substantially.

“We quickly outgrew the space that we were already in,” Flores said. “So, from the beginning of the year, we've been eyeing places to start the full brick-and-mortar.”

She said they initially wanted to open the standalone Eagle Cawffee location first and open a matcha bar a few years down the line — but they didn't want to pass up the real estate opportunities currently available to open both shops.

“Based on our sales, we sell more matcha than we sell coffee, and I really want to separate that,” she said. “So we decided [to] start our matcha bar.”

Malibu Matcha will feature a coastal atmosphere. A glass wall will separate the matcha bar from Velcrokid. Delgado said they currently expect the business to be ready to open in late September, but the timeframe is subject to change.

The couple said they're looking forward to opening a standalone location for Eagle Cawffee because it will give them a new opportunity to create a unique atmosphere.

“We don't want to be like every other coffee shop in Denton, which has the exposed brick walls and the dim lighting,” Delgado said.

Flores said they are planning to create a modern, retro futuristic atmosphere.

“We really like modern things,” she said. “For the coffee shop space, that's not something we've ever really seen.”

Along with coffee, this location will offer bagels courtesy of Shug's Bagels in Dallas and pastries from Richardson-based La Casita Bakeshop.

Delgado said that in addition to regular business hours, they plan to keep the coffee shop open at night to serve the late-night Fry Street crowd.

The coffee cart location inside Studio LaSalle, where Eagle Cawffee had served drinks since early 2025, closed down on Sunday. Delgado said this happened after a Texas Department of Licensing and Regulation inspection, which determined that their beverages could not be sold in the salon.

"We decided to stop operating after learning the rules," Delgado said. "We are a small local business that has faced challenges. This is just another challenge we'll overcome and come back stronger. We want to thank Studio LaSalle for giving us such a great opportunity to create a community."
